Uchellu Pudi

Niger Seeds Chutney Powder/ Uchellu Pudi



Ingredients 

100 grams Niger Seeds/ Uchellu 

4 - 5 Garlic cloves 

2 Red Chilli (Byadgi) 

1/2 spoon Jaggery 

Tamarind pea size

Salt as per taste

Method 

Step 1: Dry Roasting

- Heat a thick-bottomed pan over medium flame.

- Add Niger Seeds and dry roast for a few minutes, stirring frequently.

- Remove from heat and let cool.

Step 2: Grinding

- In a mixer jar, combine:

    - Roasted Niger Seeds

    - Garlic cloves

    - Red chili

    - Tamarind

    - Jaggery

    - Salt

 Grind the mixture coarsely.

Result

Niger Seeds Chutney Powder is ready!

Store in an airtight container for up to 15-20 days.

Perfect for traveling or as a quick condiment.
