Dosa with Chutney Powder and Potato Sabzi

Chutney powder can be made and stored for 10 - 15 days. It comes handy when you need not prepare any sabzi or chutney as a side dish for chapathi, dosa and rice.

Potato Sabzi
Ingredients
4 Potatoes
1- 2 Onions chopped
6 Green Chillies chopped
2 spoon Coriander leaves chopped
5 Curry Leaves chopped
1 spoon Lemon Juice
1 spoon Mustard seeds
1 spoon Urad Dal or Channa Dal
1/2 spoon Turmeric Powder
Salt
Oil

Method
Cook potatoes in a pressure cooker for 4 - 5 whistles.
Peel the skin of potatoes and mash well.
In a pan, heat 2 spoons oil, add mustard seeds, urad dal, onion, green chillies, curry leaves  and saute well.
Add mashed potatoes, turmeric powder, salt and 1/2 cup water.
Cook on a low medium flame for 4 - 5 minutes.
Garnish with coriander leaves and lemon juice.
Potato Sabzi is ready to serve.

Stuffed Brinjal

Stuffed Brinjal
Side Dish

Ingredients
4 - 5 Brinjal
1 Onion chopped
2 Green Chillies chopped
4 Garlic cloves crushed
2 spoons Red Chilli Powder
2 spoons Peanuts roasted
2 spoons Coconut grated
1 spoon Jeera
1 spoon Masala Powder
1 spoon Mustard seeds
1 spoon Turmeric Powder
1 pea size Tamarind
1 spoon Jaggery
Salt
Oil

Method
In a mixer jar, grind roasted peanuts, coconut, red chilli powder, turmeric powder,  jeera, masala powder, garlic and tamarind, grind it into smooth paste by adding little water.
Add chopped onions to paste and mix it.
Cut brinjal as shown in the picture above.
Stuff paste into the brinjals and keep it aside.
Heat 2- 3 spoons oil in a pan, add mustard seeds, green chillies and stuffed brinjals and saute it for 1 minute on a low medium flame.
Add ground paste and mix well.
Add salt, 1 cup water, jaggery and cook for 15 - 20 minutes on a low medium flame.
Serve Stuffed Brinjal with chapathi, rice, jowar roti or bili holige.

Take hot chapathi in a plate, spread 1 spoon ghee and 1 spoon chutney powder and roll it.
You can carry this while travelling for kids.
You can make this as quick breakfast for kids.

Dosa, Beans Carrot Sabzi and Grapes
Breakfast

Recipe for Beans Carrot Sabzi

Ingredients :
1 cup Beans chopped
2 Carrot chopped
1 Onion chopped
1 Tomato
2 Green Chilli chopped
1 - 2 spoon Coconut grated (optional)
Coriander leaves
1/2 spoon Turmeric powder
1 spoon Masala powder
1/2 spoon Ginger - Garlic paste
1 spoon Roasted Chana Dal powder
1/4 spoon Mustard seeds
Salt
Oil

Method:
Cook in a pressure cooker beans, carrot on a medium flame for 1 whistle and keep it aside.
Take a vessel, heat 2 spoons of oil on a low flame.
Add mustard, ginger - garlic paste, chopped onion, and green chillies. Saute untill it turns golden brown and add cooked beans, carrot, masala powder and turmeric powder.
Make a paste of coconut, roasted chana dal and tomato in a mixer jar.
Add paste into the vessel and stir well.
Add salt, coriander leaves and 1/4 cup water, cook for 10 mins on a medium flame.
Beans Carrot sabzi is ready to serve with poori or chapathi or dosa or idli.

Radish Raita

Radish Raita
Side Dish

Ingredients :
2 cups Curd
1 Radish grated
2 spoons Coriander leaves chopped
4 - 5 Curry Leaves chopped
Salt

Method :
Squeeze the water from grated radish.
Mix all the ingredients in a bowl.
Serve radish raita with chapathi or rice.

Sprouted Moth Bean Sabzi with curd is served with Jowar khadak roti.
Butti Anna is served with chutney powder.
