Brinjal Sabji
Side Dish Recipe
Ingredients:
3 medium sized Brinjal chopped
1 Onion chopped
2 Green Chillies chopped
1 Tomato chopped
Coriander leaves chopped
2- 3 spoons Oil
1 spoon Mustard seeds
1 spoon Masala powder
1 spoon Coconut grated (optional)
Salt
Method:
Take a pan and heat oil, add mustard seeds, onion, green chillies, tomato and saute well.
Add brinjal, coriander leaves, masala powder and 1/2 cup water and cook for 10 - 15 mins on a medium flame.
Lastly add salt and coconut, mix well and cook for 10 mins.
Serve it with chapathi or dosa.
